Jalapeño Vinegar
Follow these simple instructions to create your own jalapeño vinegar at home.

- 5-7 large jalapeños
- 1 clove garlic
- 20 peeled green or red peppercorns, or other chilis of your preferation
- 1 tbsp salt
- 1,5 cup white vinegar
Make a one-inch slice from the bottom up into each jalapeño and place them into a one-pint jar with the garlic, peppercorns, and salt.
Bring the vinegar to a boil and pour it into the jar, ensuring the peppers are covered.
Allow it to cool for an hour. Cover and store in a cool, dark place out of direct sunlight. The vinegar will be ready for use in 24 hours, improving over the course of about 8 months.
